We actually stumbled across this cart a few months back. We didn’t stop to eat, but we did take time to check it out because it was such a cool 1937 Dodge Truck with the back converted to a wood fire oven. Fast forward a few months…and we rediscovered it at it’s new location at Uptown Market, a bottle shop in Beaverton.
I had read that we could order our pizza, then head inside Uptown Market and take advantage of their 12 beers (soon to be 18) on tap. Uptown Market is such a great place too.

There were some great pizza options. We tried the Margarita, because I love the simplicity of a Margarita (tomato, basil and fresh mozzarella) and he executed this one well. I love the thin crust that the pizza is on and my husband loves that the edges (or the actual crust) is quite substantial. It’s actually the perfect crust all the way around.

The other pizza we order was the Amore di Maiale. This pizza is made with the whole pig. As you can see from the picture there are 4 different toppings. Guanciale, capicola, pancetta, prosciutto. Each of these meats comes from a different part of the pig, so this pizza represents the whole pig. I was instantly intrigued by this combo. What I didn’t expect was to have them divided up on the pizza. I actually liked this because you could try each of them. It was like a pizza sampler.
Overall we loved this pizza. We loved the location, there are not many food carts on the west side. So they are a welcome site for sure. We already know we will be eating at this one again and again.
- Atmosphere is very simple here. This is the only food truck here.
- Pricing was about $9-$11 for local organic pizza.
- Service was great. He was helpful and made some great suggestions.
- Drinks were all at Uptown Market.

Brett’s pizza always tastes great and I’m always happy to see him out infront of Uptown! Can’t beat that classic Margarita and a cold beer, mmm!
